Georgian Pilaf recipe:
Ingredients:
Salt to taste
Carrots - 500 g
Garlic - 30 g
Black pepper, ground - 3 g
Sumakh (from "Gamarjoba Genatsvale") - 1 tbsp. l.
Seasoning for pilaf (from "Gamarjoba Genatsvale") - 1 tbsp. l.
Quince - 1 pc. (medium size)
Refined sunflower oil - 500 g
Onions - 500 g
Rice - 1 kg
Lamb - 1 kg
Chili pepper - 1 pc.
Cooking method:
1. Pour sunflower oil into the cauldron, heat and lay the ribs, peeled from meat, for frying. Then we remove the darkened bone.
2. Cut lamb into pieces, put in butter and fry. Next, we send the carrot straws, let it sit for a few minutes and add the onion rings.
3. Salt, pepper, add seasoning and sumac, stir and dilute with hot water to coat the meat. Bring to a boil. Put the washed rice into the cauldron, put the pepper pod, garlic, quince slices and pour boiling water again to cover the rice by 2 cm. Now you don't need to interfere with pilaf.
4. When the rice has absorbed all the water, pierce it vertically in several places, then tightly cover the vessel. Next, simmer the dish over low heat for 40 minutes. Mix the finished dish and serve in a portioned plate under chopped cilantro.
